Sarsiadong Tilapia

Came from the Spanish word, sarsa which literally means “sauce,” your average fried Tilapia is brought to the next level with a savoury sauce. For this, you’ll need onion and garlic, tomatoes, eggs, fish sauce and fresh Tilapia. To do this, you need to:

First, pre heat the pan and fry the Tilapia. After frying, set aside.

Next, cut the onion and garlic (preferably minced), and some tomatoes.

Then, put some oil in the pan  and sauté the onion and garlic. Just before it turns golden, add tomatoes and continue to sauté.

Put some fish sauce to taste, cover, and let it simmer. Make sure to do this in a low heat.

While waiting, separately beat the eggs in a bowl.

After that, when the tomatoes are nicely cooked, you can now add the beaten eggs while stirring the mixture. You may want to make sure there is enough oil and tomato sauce to prevent it from turning out like an omelet, rather than the sarsa.

Lastly, put the fried Tilapia and cover. You can sprinkle some sugar to get the sweet and a little sour taste (optional). Let it simmer for about 2 minutes.

And voila! Sarsiadong Tilapia is ready to be served.
